Happy kids and happy bellies. Refined sugar free, #vegan choc chop muffins. Or just add what you want to this basic muffin recipe - raspberry and fig is an awesome grown up version 
3 cups spelt flour
2 tsp aluminum free baking powder
1/2 cup coconut sugar
2 tbs ground flaxseed
1/2 olive oil
3/4 cup rice milk
1 cup of 100% dark choc chunks/chips 
Preheat oven to 160 degrees Celsius. Grease or line muffin tins.
Mix all dry ingredients in a bowl. In a separate bowl mix the wet ingredients. Then mix these together and add in the chocolate. Spoon the mix into the muffins tins, 1/2 way up. And cook for around 20 to 25 minutes. Cool in tin for at least 5 mins before carefully removing.

This is what lunch looks like when  fridge is running low. But it’s all good as I’m reading my first Collective Mag and LOVING IT and managed to get to Bikram! Which is a bloody miracle! So life is pretty good in this moment, right now 🙏 Ezekiel bread with unhulled tahini, avo, tomato, Life In A Jar fennel sauerkraut and crunchy cos and an essential hemp bliss ball and coldpressed OJ and carrot juice on the side.
