This is what lunch looks like when  fridge is running low. But it’s all good as I’m reading my first Collective Mag and LOVING IT and managed to get to Bikram! Which is a bloody miracle! So life is pretty good in this moment, right now 🙏 Ezekiel bread with unhulled tahini, avo, tomato, Life In A Jar fennel sauerkraut and crunchy cos and an essential hemp bliss ball and coldpressed OJ and carrot juice on the side.

Going vegan will leave many perplexed. But it has been the one thing that I am certain has bought me immense happiness, balance and capacity to show more love. I am more peaceful and more patient. One year ago I suffered vertigo, headaches, mood swings, hormonal fluctuations, acne, and skin sensitivities, plus some. My skin would heat up and literally shed off my face. My body was suffering from acid overload. Now a year on and the changes I have made are that I am now 100% plant based rather than just vegetarian, I make sure I eat 80% raw, I don’t drink alcohol, and my caffeine intake has gone from 6 espresso shots a day to 3 a week max if that (not perfect yet but getting there). Everyday I have a coldpressed juice or make a big green smoothie or both. Everyday is about nourishment and not deprivation. I have energy, I feel little to no stress and I can manage my 4 children with no family support in a big city. My iron and B12 levels are super high and I consume only plant foods with no supplements at all. So that’s my vegan story. The best thing I ever did for my health, happiness and my family.

Chia pud parfait on the run. After I shot this pic my 3 year old runs up and eats all the raspberries. Which reminds me that you just can’t force toddlers to eat when you want. I gave up long ago! It is impossible! Yes, I offer set meals and she eats a little then. But all day long there’s healthy nibbles on hand such as snacks of fresh berries, cashew nuts, dried fruit, raw veggie sticks with nut paste, or sautéed broccoli florets. We regularly make a “healthy platter” and the kids are to pick off what they want (and I eat the rest!). We try to make food fun and by the end of the day all the boxes get ticked.
