Here’s the recipe for the yummiest and healthiest Banana bread with strawberry, raspberry and coconut muffin-top.
3 ripe bananas
1 cup pure maple syrup
1/2 cup cold pressed olive oil
2 tsp vanilla extract
1 tsp cinnamon
1 1/2 cups of spelt, rye or gf flour
1/4 cup desiccated coconut plus extra
2 tsp baking powder
1/2 punnet strawberries sliced
1 handful of frozen raspberries
Mix all dry ingredients together. In another bowl mix wet ingredients and roughly mash in bananas with a folk. Add dry ingredients to the wet ingredients and mix through but don’t over mix. Line a loaf tin with baking paper and grease with olive oil. Pour in mix and top with berries and coconut. Bake in the preheated oven at 160 degrees Celsius for 45 minutes. Check the top isn’t burning. You may need to cover it with alfoil to stop this from happening.

1 tbs LSA
1 tsp cinnamon
1 small handful of raw almonds
1 shredded carrot
1 tsp vanilla extract
1 tbs chia seeds
1 tbs white quinoa
1/2 cup coconut water
1 tbs coconut yoghurt, cashew cream or coconut cream
Extra coconut yoghurt to top it off. 
Mix all ingredients and leave in a glass jar overnight. 
Using glass instead of plastic to store food means you are free of toxic BPA which absorbs into your food and then into your system. BPA is found in plastic and plastic is made of petroleum. This is same stuff as what gas and oil is made from. Yuck! We don’t want this crap in our bodies! Among many side effects, it is known to disrupt the hormone system, especially estrogen production. Instead recycle all your glass jars and use these instead!
